Hugo's on Swan Street is a deli that earns its reputation one regular at a time. The foot traffic tells you everything—a steady mix of locals and people who've heard enough about it to make the trip. We've been friends of the house for a while, and for this one we've brought back a breakfast special built around an English muffin stacked with pork and fennel sausage, fried egg, American cheese, nduja butter and a finish of shichimi seasoning. The kind of thing that makes a strong case for getting out of bed.

Carlton's Madeleine de Proust has built a reputation that outpaces its years in operation—a place that people discover and immediately tell someone else about. We first collaborated with them on a madeleine for our Armor-Lux launch. For this one, we've worked together on a pistachio financier—buttercream inside, charcoal chocolate shell on top. Worth the trip.

North Melbourne's Boire is the kind of restaurant that feels genuinely welcoming without making a performance of it, considered without being precious. Chef Nagesh Seethiah has built something that makes full use of the neighbourhood's character: wide footpaths, an unhurried pace, and a crowd that wants to be there. The menu moves with the time of day—rotating sandwiches at lunch, smaller snack-driven dishes in the evening built around a strong wine list. If you're in the all-black Melbourne, lunch gets you free fries and a cola with your sandwich. Come back at night and there's a taro fritter and a martini on us.
